Finely chop the chocolate and put it in a large bowl. Add half of the cream and melt the mixture over simmering water, stirring until it is well-incorporated. Once the mixture is smooth, remove the bowl from the hot water pan and cool the exterior in ice water as you add in the remaining cream. Stir until stiff peaks form. Take the pre-cut buns and pipe the chocolate cream mixture between the slices of bread, using a spatula to smoothen the surface. Transfer the buns to a plate and dust with sugar. Top with strawberries and mint leaves before serving.
